Pre-Workout Meal: Just a small handful of nuts. I didn't eat this whole container...it's just the container that the nuts are in. I knew I needed something to get my body going but wasn't in the mood to make anything, plus, I just wanted to get this workout underway.
Workout: Double video today. Pure Cardio and Cardio Abs. It was intense. Because of my lower back issues it's really hard for me to do abs, especially once you get on the floor. I did my best but definitely had to modify a lot of what Shaun T did. I know I didn't get a great ab workout in, but it's probably the best ab workout I've done since I stopped working out with my trainer a few years ago. Roomie cracked up as she heard me sassing Shaun T. He kept saying, "How ya feelin? Feelin alright!" Yes, the second one was not a question-he was telling us that we were feeling alright. To which I would say, "NO! Shaun T, I feel like CRAP!" giggle...giggle...from the roomie.
Breakfast: I'm not making myself eat veggies for breakfast on the weekends if I don't feel like it. So, today was paleo pancakes with fruit salad and toasted nuts. A few slices of bacon and some sweet potato slices I baked along with the bacon. I think they needed more time in the oven though. I also had the rest of the mango from when I made the fruit salad. I know I should have had some veggies, and this feels like a "splurge" or a "cheat" but man, a sista needs a break from leafy greens every now and again!
Lunch: I was still feeling hungry after breakfast but I knew it was all mental. I made myself wait 45 minutes before I would allow myself a snack. Guess what...not hungry. Got meal planning and grocery shopping done then it was time for lunch. I put some kale into the oven to make "chips" I followed this recipe and they turned out really delicious-my kale pieces were a little small so they did burn a little but the bigger ones were perfect! I made a scramble with mushrooms, broccoli and onions and paired it all with the most delicious avocado ever...I used this recipe for a bacon, garlic, balsamic avocado creation...yum!
Dinner: I'm babysitting my girls tonight and they made personal pizzas (but Phoebe had chicken soup because she prefers it and we had a bunch left over from earlier in the week) so I threw together some zucchini fries, asparagus, and sweet potato chips. Only problem was, I thought there was chicken but it must have gotten eaten...So, I made a scramble with kale, topped with half an avocado. Then, we headed off to the trampoline place...
Workout: One hour of jumping on the trampolines with the girls (I'll post photos soon) So glad tomorrow is a rest day...no workouts for me.
PWM/Snacking: Wasn't sure how to classify this. I did workout--kinda, but this isn't what I'd ever eat after a real workout. How this snack (grapefruit with toasted pecans/coconut) came to be in the first place is this: the girls and I needed to stop by the store and grab some eggs and avocado since I ate the last at dinner and I want to make sure they aren't looking for eggs tomorrow and are out. So, anyway, we stop at this store called Fresh Market or Farm Fresh or something like that (it's next to Walmart on Touhy in Skokie) and I decided to be generous and let the girls pick something out for snack since they had been perfect angels all night. Well, by the time we got home and I cut up their chocolate mousse cake and lemon bar I was really struggling. I picked the least sugary thing I could think of that would still feel like something special...grapefruit it is! It was delicious. I added the nuts/coconut for a little protein/healthy fat.
Thoughts:
It's really hard to keep on track during the weekend. Usually I'd say it's because I'm sitting around and it's hard not to snack but today, I was so busy I almost missed eating lunch before I had to be at work. I was so busy making sweet potato hash for the week (honestly, I wanted to make a frittata too, but I ran out of time) that I left the kitchen a mess and scarfed down my food just before running out the door.
I need to continue to pray about what to eliminate from me schedule so I'm not constantly running around like a chicken with my head cute off.
I'm trying a few new recipes this week...we'll see how they go.
Also, this morning after the workout, I felt like, "oh, I think I look better." Then by afternoon, I was feeling more like..."is my body ever going to change?!" Ugh...patience...the worst!
Have to be at church by 8:20 tomorrow morning because I'm in charge of the greeters/ushers/offering and I must take a shower and wash my hair...it hasn't been washed since I got it done Tuesday...and there's been a lot of Insanity since then...breakfast might just be the extra paleo pancakes I made today...quick and easy. Glad I made extra!
