Day 14

Sunday!  The day of rest!  Finally!

Breakfast: Was running late to church so it was a crummy breakfast...delicious but nutritionally crummy.  The rest of the pancakes from yesterday and fruit salad topped with pecans and for a quick veggie the beetbox veggie pouch...lame, I know...


Lunch: Cooking a lot for the week so quickly put together some lunch in between making a frittata and chicken burgers.  Ended up with sautéed squash and sweet potato slices, red pepper slices, frittata (from the freezer, not the new one I made) and the delicious balsamic bacon avocado.  Yum!


Snacking: The bestie was over and we demolished my papaya...only thing better than eating a delicious papaya is sharing it with someone you love!


Snacking: Had a quick snack while babysitting since I had to run to the airport to retrieve the roomie who has been away and wouldn't have time for dinner until I get home later.  Made some cucumber, onion, tomato salad with cilantro and lime juice.  And two hard boiled eggs.  Oh, and I ate a few frozen mango chunks that were left over from the kids...from Trader Joe's...they are delicious (sorry, didn't snap a pic...I'm fired!)


Dinner: Pesto spaghetti squash with chicken bacon burgers and fresh tomatoes.  A small dinner since I had the snack earlier.  Will post a pic after I make it...headed to the kitchen now...


Snacking: Apparently, I've thrown the whole "no snacking" and "no sugar, even natural sugar" thing out the window tonight/this weekend...this pear has been calling my name for a few days and as I looked at it tonight I couldn't help but think it was on it's last good day.  So, I cut it up and I'm going to eat it.  Back on the bandwagon tomorrow...no snacking and minimal fruit.  Ugh. Worst!



Thoughts:
Was very glad to not be working out today.  I did however spend my entire weekend (minus the hours I worked and attended church) in the kitchen cooking for the week.  I'm exhausted and not ready for the week, as I'm feeling more behind than I did on Friday.  But...I should save a bunch of time this week as all my meals are pretty much prepared...I made:

A batch of sweet potato hash
A giant frittata
Chicken bacon burgers
Spaghetti squash/pesto
Carrot cake...this is not for Whole30...it's for my carrot cake party celebrating my dad's birthday...
